Breakfast, my favourite meal of the day. I just love waking up in the morning and making myself a healthy meal to start the day with my cup of oat milk cappuccino. I am a morning person and breakfast just really sets me up for the day ahead!
When I met Alessandro, I discovered that I had been making eggs wrong all my life, well for twenty-four years of it. Eggs are very delicate and thus require lots of love, low heat, and patience.
However, Alessandro being a chef...well made amazing scrambled eggs but I had to close my eyes when he reached for the butter. To make it "creamy" he said. While I enjoyed his scrambled eggs gladly, I knew that there had to be a way to achieve this egg-heaven-ness without the use of butter or milk.
It took some time but I finally created a recipe that is simple and healthy and that can be incorporated in one's every day regime. It just warrants a little bit of time and patience.
