But no, we are in September, end of September and Fall is nowhere to be found in this intense heat. I am sitting outside typing this recipe for you guys and I am literally dripping sweat, refusing to go inside because you just cannot not spend days like these outside.

This chickpea salad is exactly what I needed (and what you didn't know you needed)! It has a touch of sweetness from the dates with a bit of tanginess from the lemon zest and the fresh parsley, tomatoes, cucumbers, and carrots really give it some summer freshness and fall harvest like feel.
