I don’t know about you but I have this deep attraction to Mediterranean food; I crave and marvel at the species, the curries, and the culture that comes with it.
I really think that it was my trip to Morocco last year that made find a greater appreciation for its culture, ultimately making me fall in love with the cuisine.
The streets, stores, and the atmosphere was something else in Marrakech. Everything is bright and exotic; the streets crowded with food stands, shops, vendors, and people. As you pass by the streets, so many spices fill your senses with wonder--as every spice is so complex with its own characteristics.
I couldn't bring back Morocco with me but I could bring some its spices. They have been my source for venturing into new unexplored territory in my cooking. This Tumeric Roasted Cauliflower Soup has subtle Mediterranean notes.
Maybe I really am part Persian like some say--I mean my facial features do sometimes strongly resemble that of a Persian woman, so maybe I do have some Persian heritage I don’t know about? Who knows.
What I do know is that I have a deep appreciation for really good seasoning--after all Peruvian cuisine (I am Peruvian) is all about the sazón of the food.
Without the seasonings, our cuisine would be bland and without life.
Peruvian cuisine can sometimes take some mediterranean notes especially when cooking dishes with dates and raisins--if you haven’t cooked with dates yet, I highly encourage you to do so, you are missing out.
Now I also love combining mediterranean cooking methods with southeast asian cuisine--where a key ingredient for them is coconut milk. Coconut milk adds a special type of cream to your soups and the curry spices give it an enticing scent and firm taste.
That’s where this recipe comes from--a mix of Mediterranean experiences with a Southeastern Asian culture. This soup is not only delicious but it's extremely healthy as well with its tumeric spice, healthy fats from the coconut milk, and nutrients from the cauliflower and kale.
Perfect for the end of the summer where it’s not too hot and you can enjoy some soup. Cauliflower at this time of year is also in abundance at the farmers market!
