I love pancakes—who doesn’t? It just brings back childhood memories of going to your favourite diner for breakfast on a weekend or waking up on a Sunday to smell the scent of your mom’s pancakes on the breakfast table.
Okay, I’ll be honest with you, I never really had that (since I’m Peruvian and in Peru we don’t do pancakes) but I always watched it in the movies and terribly wished that it was me eating those fluffy pancakes on a Saturday morning!
Naturally, over the years, I developed a love for brunch and I would always search for the perfect extraordinary pancake combo. After numerous brunch dates, I’ve found some like Beast in downtown Toronto and Kerr Street Cafe in Oakville that have unique pancake creations. They have been the source of my inspiration for both decoration and combinations of ingredients when developing my own pancake recipe.
Sadly though, Brunch is only offered on weekends and sometimes I found myself cravings pancakes at random times during the week, which posed a problem because I couldn't just go to any of the restaurants mentioned above.
Plus, sometimes you just want to stay in, especially if you have kids or are just looking for a lazy Sunday. This is one of the reasons why I started making my pancakes at home.
The other reason was more about knowing your food. Cooking and preparing your own food is really the only way to know everything you are putting into your body. I love tasty dishes but I also like to feel good eating them, and when eating out you don't always feel the healthiest. This is why I love this recipe because I don't have to feel like I am cheating my body. These pancakes are deliciously sweet and nutritious as well.
It took some time to come up with the perfect mix but now that I have finally made my pancake brunch dream a reality, I can't wait to share it with you guys so that you guys can make fluffy, delicious, and healthy pancakes at home too!
Instead of using regular white flour, I make them with a banana base and oat flour to make them more wholesome and the toppings are sweetened with natural sugars so it's much better for you.
