Secret Lands Farm is a family run, sheep farm that offers a variety of dairy and meat products. I had the pleasure of meeting Sophie Burov, one of the owners of the farm a couple of years ago when they had their shop in downtown Toronto on Dupont St. During my visit, I was super spoiled and was able to try most, if not all of their amazing products so I can be sure when I say they have some of the best dairy products in Ontario!

Baked Milk yogurt, along with Halloumi, Pecorino fresco, Rabiola, and Ricotta are a staple in my fridge.I love their products not only because I know they are made with love and care but because they taste delicious! Plus they are much easier to digest than other dairy products (specially commercially mass produced dairy products).
Sheep’s milk has more protein, calcium than cow’s milk and it is it’s source of omega 3's and smaller fat globules that make it easier for the human body to digest. They also use Kefir as a starter culture for all their cheese and yogurts which no doubt contributes to its unique flavour and digestive properties!

Now a little more about their Baked Milk Yogurt. It sounds weird but it’s one of the tastiest yogurts I’ve ever tried. I can eat it by itself or drizzled with some honey or maple syrup topped with some berries but I actually really enjoyed it on top of my pancakes or crepes!
Baked Milk yogurt was inspired by the Burov’s Russian roots. In Russia, “Baked Milk” is a popular drink and staple. It is made by simmering milk for 6-8 hours on low heat. The result of this prolonged heat exposure exposure causes a reaction between the milk’s amino acids and sugars, resulting in the formation of melanoidin compounds that give it that creamy and caramel colour. It’s process also makes the milk sweeter and thus more palatable than heated milk as well as more digestible.
You can understand why Secret Lands Farm’s baked milk yogurt tastes so good compared to other yogurts, specially commercially made ones and it is more digestible (the Kefir starter also contributes to this).
Though you will pay a premium price for this yogurt, I think it’s worth it because you are paying for the quality not the quantity. Plus, knowing that I won’t get any bloating or intolerance when I eat this yogurt is a winner in my books!
As I mentioned before, I love this yogurt by itself with berries and some honey or maple syrup but I really love them on top of my pancakes. I find it a great way to add some protein to my breakfast and it fills me up more than just plain pancakes with syrup and berries.
Today I am sharing Alessandro's fluffy pancakes with you. You can make any pancake recipe but this one is our go to. Plus, it has a special place in my hear because he first made me these pancakes during our time in Montreal (when we moved in together after meeting in Italy).
Chef Bonfigli’s pancakes
1 cup of flour
1 cup milk
¼ cup of Canola Oil
1 whole egg
2 Tbsp Sugar
1 tsp Vanilla
2 tsp Baking Powder
½ tsp Baking Soda

Blueberries (or any berries of your choice/in season)
Drizzle of Maple Syrup (I use Dark Syrup from Martin's Sweet Farm)
1 Tsp of Almond Butter (optional)
